Turkish coffee - is also known as Greek coffee and also has a lot of similarities with Arabic coffee. Turkish/Greek coffee making is done by bringing to boil a mixture of extra fine ground coffee, water and sugar to form a muddy, thick coffee mix. It’s often made in what’s known as an Ibrik (Turkish) or briki (Greek), a long-handled, open, brass or copper pot. The mixture is heated until it boils up and foams to the top and is then poured, unfiltered, into small cups or Demitasse cups, with the fine grounds included.
